Cia Brownies Recipe

By far the best brownie recipe I've tried. Courtesy of the C.I.A. (Culinary Institute of America, of course.)

Ingredients
Cooking spray
3/4 c (1.5 sticks) butter
4 oz. unsweetened chocolate
2 large eggs
1-1/3 c sugar
2 tsp vanilla
1/4 tsp salt
1/4 cake flour
1/4 c coarsely chopped walnuts.

Directions
1-.Preheat oven. 350 F.
2-.Melt butter + chocolate together.
3-.Whip eggs, sugar, vanilla + salt on high until thick and light in color (4-5 minutes.)
4-.Pour some of the egg mixture into the melted chocolate mixture while still stirring, then pour in remaining egg mixture and blend on medium speed.
5-.Mix in flour + nuts on low speed until just blended. Batter will be very wet.
6-.Pour into greased 9x9 pan. (They tend to be sticky!)
7-.Bake until toothpick inserted into the center of the pan comes out with a very crumbs clinging to it (about 30-40 minutes.)
8-.Allow to cool completely on a wire rack before cutting into 3-in. square pieces.
